A New “Simplicity is Key” Recipe Just for You

3 Things I Knew for Sure Yesterday

  1. The oven was out of the question with 100 degree temps.
  2. I wanted something easy I could whip up by hand.
  3. There was a partial can of artichoke hearts waiting for me in the frig.

Seeing the jar of artichoke hearts, I immediately had a craving for spinach artichoke dip. My taste buds were way ahead of me. My mouth watered at the thought.

How could I carry this out when the recipes I had called for soaking cashews, blend with plant-based milk and other ingredients, then bake in the oven.

I’d done all this before but yesterday that seemed like a helluva lot of work. Did I mention it was a lazy day?

I needed an alternative to the cashew cream. I’d recently used silken tofu for Tzatziki, why not give it a try for this dip?

I only needed a third of the tofu block which means more uses later this week. My partner and I were both nodding in agreement with the first bite and mouths full.

A delectable dip and perfect size for two. Yum! Yum! Yum! 😋

Spinach Artichoke Dip

What you’ll need

  • Small casserole dish to fit your air fryer
  • Medium-sized bowl
  • Fork
  • Rubber spatula

Ingredients

  • 1/3 silken tofu block -or- use soft tofu
  • 1/2 lime, squeezed
  • 1 t garlic powder
  • 1 t onion powder
  • Dash of ground sea salt
  • Black pepper, several grinds to taste
  • 2 scallions, chopped
  • 1 t homemade grated Parmesan
  • 2 T nutritional yeast
  • 1/2 cup artichoke hearts, diced
  • 1 - 2 handfuls spinach, stemmed & torn into bite-sized pieces
  • Shredded vegan Parmesan -or- mozzarella (optional topping but I highly recommend)

Step 1 - With fork whip the tofu, lime juice and spices until creamy.

Step 2 - Fold in the scallions and add the nutritional yeast & grated Parmesan. Mix well. Dice the artichoke hearts and stir into the mixture.

Step 3 - Stem and tear the spinach and stir into the dip. Use the spatula to spread the dip into the casserole dish. Cover and store in the fridge until ready to air fry.

Step 4 - Air fry at 360 degrees for 12 minutes. Stir halfway through.

Step 5 – At 10 minutes, check for doneness. Top with the shredded vegan Parmesan to melt.

Step 6 – Time to eat. Bon appétit.

Note - this was the first time I tried Parmela Creamery Parm. As you can see in the first picture, it melted quite well. I hope I’m able to find it again. Enjoy!
