Be a "Clean Plater" with This Delicious Dish

Peruvian Stir Fry was one of the first dishes I learned to prepare on my plant-based journey. It’s easy to make and “oh-so” delicious to eat. Chef’s kiss 👩‍🍳💋

Granted, my prep time may take a little longer than a lot of cooks because there are several veggies to chop. I’m getting faster though since I’ve started making one or two stir fries every couple of weeks.

I chop one vegetable at a time and put each in a bowl. This makes for easy cleanup, as I add each veggie, I stack the bowls, then wash them while the ingredients steam.


Peruvian Stir Fry Ingredients - Makes 2 Servings

  • 1 c cooked quinoa
  • 1/2 or whole red pepper, sliced & diced
  • 1-2 stalks of celery, sliced & diced
  • 1/4 red onion -or- white onion, sliced & diced
  • 1/2 eggplant, sliced & diced
  • 1/3 - 1/2 zucchini, sliced & diced
  • 1/3 yellow squash -or- yellow pepper, sliced & diced
  • 1 Roma tomato, sliced & diced
  • 1/2 cup of artichokes in water, drain and cut into bite-sized pieces
  • 1 cup of spinach, loosely packed, stemmed & torn into pieces
  • 2 tablespoons of cilantro or dried celery leaves

Stir Fry Sauce Ingredients

  • 1 tablespoon of sesame oil
  • 1 tablespoon of minced garlic
  • 1 tablespoon of liquid aminos
  • 1 teaspoon of panca sauce (or more, if you like it spicier) I’ve not been able to find this paste so I make my own with the tomato paste & hot chili Habanero sauce shown in the picture below.
  • 1 tablespoon of chili sauce -or- hot sauce of choice

Instructions

Step 1 - Cook 1/2 cup of quinoa.Post follows on how to make the best quinoa.

Step 2 - Add sesame oil and garlic to the wok or large skillet on medium-high heat and cook until garlic is fragrant.

Step 3 - Add onion and cook for 1-2 minutes. Then add in the celery and peppers and cook until soft.

Step 4- Add zucchini and squash until soft, then the eggplant.

Step 5 - Add a splash of water and cover to steam slightly.

Step 6 - Stir in the tomatoes and artichokes with a pinch of salt, pepper to taste and the liquid aminos.

Step 7 - Add chili garlic sauce and panca pepper paste. Stir thoroughly to coat.

Step 8 - Add spinach and cilantro.

Step 9 - Remove from heat. Plate the quinoa and smoother with the veggie stir fry. Garnish with cilantro.

Yummy! The result — You’re a Clean Plater!!
