Welcome back (or welcome) to my Summer Salad Series — one chilled salad at a time.
My partner makes a wickedly yummy guacamole. Lucky me, right? I, on the other hand, had never made anything with avocado.
What was I waiting for? I’m not sure. Maybe it was the uncertainty of how to select a ripe avocado or one that would ripen within a day or two. I’m still working on that, but I’m getting better. When I select the right one, it’s like hitting the lottery.
Avocado spread was my first attempt highlighting avocado as the main ingredient. The recipe is a simple one which I shared in my Chia Pudding post (click link). I use it to this day on toast and as a veggie dip.
The avocado spread/veggie dip turned out so well, it was time for a new adventure. Avocado as a side dish seemed inevitable.
I read many a recipe. When I came across avocados, tomatoes and cucumbers, I knew that was the one. I’ve tweaked it many times using either cucumbers or zucchini, different tomatoes, peppers and onions.
All have been delicious. The recipe is at its best with in-season ingredients. I can attest as well that it’s a great one and an easy one all year long.

Recipe #6— Avocado Tomato Salad
~ Ingredients — 2 Servings ~
- 1/3–1/2 cucumber — or — zucchini, sliced and quartered
- 1 Roma tomato — or — a handful of grape tomatoes, sliced
- 1/3–1/2 avocado, ripe and sliced
- 1/4 red or white onion, sliced and quartered
- 1/4 - 1/2 jalapeno, sliced and minced (optional)
- Several sprigs fresh cilantro, chopped — or — 1 tsp dried cilantro or celery leaves
- 1/2–1 T extra virgin olive oil
- 1 T lime, juiced
- Black pepper to taste
Instructions
Step 1 — Place sliced cucumber/zucchini (or a combo of the two), tomatoes, avocados, onion, jalapeno and cilantro in a large salad bowl.
Step 2 — Toss with the olive oil, lime juice and pepper.
Step 3 — Refrigerate to chill for dinner.
Step 4 — Bon appétit!
